  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Wet Ingredients

  • 1/2 cup butter (softened) Ensure it’s softened but not melted.
  • 1/4 cup erythritol or preferred sweetener Adjust according to taste.
  • 1 teaspoon vanilla extract
  • 1 large egg

Mix-Ins

  • 1/2 cup sugar-free chocolate chips

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine almond flour, coconut flour, baking soda, and salt.
  • In another bowl, cream together butter and erythritol until light and fluffy.
  • Beat in vanilla extract and egg until well combined.
  • Gradually add the dry ingredients to the wet mixture, stirring until fully combined.
  • Gently fold in the chocolate chips.

Baking

  • Spoon tablespoon-sized portions of dough onto a parchment-lined baking sheet.
  • Bake in the preheated oven for 10-12 minutes until the edges are golden brown and the centers are soft.
  • Cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

Store cooled cookies in an airtight container. They can be frozen for up to three months. For extra flavor, consider adding nuts or spices as variations.
