  • 1 cup natural peanut butter (unsweetened) Ensure it's pure peanut butter without added sugars.
  • 1/2 cup erythritol or your preferred keto sweetener Adjust sweetness to taste.
  • 1 large egg Standard size egg.
  • 1 teaspoon vanilla extract Optional for enhanced flavor.
  • 1/2 teaspoon baking soda For leavening.
  • a pinch salt Enhances flavor.

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a mixing bowl, combine the peanut butter, erythritol, egg, vanilla extract, baking soda, and salt. Mix well until you get a smooth dough.
  • Use a tablespoon to scoop out portions of dough and roll them into balls. Place them on the prepared baking sheet, leaving enough space between each ball to allow for spreading.
  • Gently press each ball with a fork, creating a crisscross pattern on top.

Baking

  • Bake in the preheated oven for about 10 to 12 minutes, or until the cookies are lightly golden.
  • Remove from the oven and allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

Serve with coffee or tea; great for snacks or dessert. Adding chocolate chips or nuts can enhance flavor and texture. Store in an airtight container at room temperature for up to a week, or refrigerate for up to two weeks.
