Preparation

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy (3-5 minutes using an electric mixer).
  • Add the egg, key lime juice, and lime zest, mixing until fully incorporated.
  • In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this to the butter mixture, beating until just combined.
  • Scoop tablespoon-sized portions of the dough, rolling them into balls and placing them on the prepared baking sheet.

Baking

  • Bake the cookies for 10-12 minutes or until the edges are set and centers are slightly soft.
  • Remove from the oven and let sit on the baking sheet for about 5 minutes before transferring to a wire rack.
  • Once cooled, dust with powdered sugar before serving.

Notes

For a richer flavor, consider adding white chocolate chips or shredded coconut. Store in an airtight container at room temperature or freeze for longer preservation.
