Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the softened unsalted butter and granulated sugar. Blend until light and fluffy (about 2-3 minutes).
  • Add in the egg, freshly grated lemon zest, and freshly squeezed lemon juice. Mix until fully combined.
  • In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.
  • Gradually add the dry mixture into your wet mixture. Stir gently until just combined.
  • Roll the dough into small balls, roughly 1 inch in diameter.
  • Coat each ball in sparkling sugar and place them on a baking sheet lined with parchment paper, leaving space between each.

Baking

  • Bake for about 10-12 minutes, or until the edges are golden and the centers remain soft.
  • Allow the cookies to sit on the baking sheet for a moment before transferring them to a wire rack to cool completely.

Notes

Store in an airtight container at room temperature for up to a week. To freeze, layer cookies between parchment paper in a freezer-safe container.
