  • ¼ cup coconut oil, melted
  • 1 tsp vanilla extract
  • 1 cup granulated sweetener of choice Adjust based on personal preference

  • 1 cup chocolate chips of choice Use semi-sweet, dark, or white chocolate

Preparation

  • Preheat your oven to 180°C (350°F).
  • Line a baking sheet with parchment paper.
  • In a large mixing bowl, combine the white whole wheat flour, cornstarch, baking soda, baking powder, and salt.
  • In another bowl, whisk together the granulated sweetener, unsweetened applesauce, melted coconut oil, and vanilla extract.

Combining Ingredients

  • Gradually add the dry ingredients to the wet mixture, stirring gently until no dry flour remains.
  • Fold in the chocolate chips.

Baking

  • Measure out the cookie dough and form 16 balls, spacing them evenly on the baking sheet.
  • Bake for 10 to 12 minutes until the edges are lightly golden.
  • Allow the cookies to cool on the baking sheet for about 10 minutes before transferring to a wire rack.

Notes

For a uniform cookie shape, use a cookie scoop. You can freeze extra dough for future baking.
