  • 1/4 cup coconut oil, melted

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large bowl, mix together the whole wheat flour, rolled oats, no-calorie sweetener, baking powder, baking soda, and salt until well combined.
  • In another bowl, combine the unsweetened applesauce, melted coconut oil, egg, and vanilla extract. Whisk until smooth.
  • Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
  • Fold in the dark chocolate chips gently, ensuring they are evenly distributed throughout the dough.

Baking

  • Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  • Bake for 10-12 minutes, or until the edges are lightly golden and the tops look set.
  • Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

For softer cookies, chill the dough for 30 minutes before baking. These cookies can be stored in an airtight container for up to a week.
