Preparation

  • Boil water as directed on the Jello package. Sprinkle in mandarin orange Jello powder and stir until dissolved.
  • Allow the Jello mixture to cool at room temperature for about 10 to 15 minutes, ensuring it remains pourable.
  • In a large bowl, combine cottage cheese, crushed pineapple, and Cool Whip. Stir until the mixture is fluffy.
  • Gently fold the cooled Jello into the cottage cheese mixture with a spatula, ensuring the Cool Whip remains airy.
  • Transfer the mixture to a serving dish and refrigerate for at least two hours to set.

Serving

  • Serve chilled in bowls or on plates, optionally topping with chopped nuts just before serving.

Notes

Store leftovers in an airtight container. The salad lasts up to three days, but the texture may change. Add nuts just before serving to maintain crunchiness.
