Salad Ingredients

  • 4 cups mixed greens (spinach, arugula, or your choice) Choose fresh, seasonal greens.
  • 1 can (11 oz) mandarin oranges, drained Alternatively, use fresh mandarins.
  • 1/4 cup red onion, thinly sliced For a milder flavor, soak in cold water before adding.
  • 1/2 cup sliced almonds or walnuts Optional: use your choice of nuts.
  • 1/2 cup crumbled feta cheese Optional for added creaminess.

Dressing Ingredients

  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey or maple syrup Optional for sweetness.
  • to taste Salt and pepper Add to taste.

Preparation

  • Rinse the mixed greens under cold water and dry thoroughly to prevent sogginess.
  • In a large salad bowl, combine the washed greens, drained mandarin oranges, thinly sliced red onion, and choice of nuts.
  • If using feta cheese, sprinkle it in at this stage.

Dressing

  • In a separate bowl, whisk together the olive oil, apple cider vinegar, honey or maple syrup, and a pinch of salt and pepper.
  • Drizzle the dressing over the salad ingredients.
  • Use tongs or two forks to gently toss the salad, ensuring even coating of the dressing on all ingredients.

Serving

  • Serve immediately or chill for a few minutes before serving.
  • For an elegant presentation, serve in individual bowls or plates.

Notes

Store any leftovers in an airtight container in the refrigerator, keeping the dressing separate until ready to eat. Best enjoyed fresh.
