Instructions
 

Preparation

  • Preheat your oven to 350°F (180°C). Line a baking sheet with parchment paper.
  • In a mixing bowl, cream the softened butter and powdered sugar together until light and fluffy.
  • Stir in the vanilla extract to combine.
  • In another bowl, whisk together the all-purpose flour, cornstarch, and salt.
  • Gradually add the dry ingredients to the butter mixture, mixing just until combined.
  • Scoop small amounts of dough and roll them into balls, about 1 inch in diameter.
  • Place the dough balls on the prepared baking sheet, spacing them about 2 inches apart.
  • Gently flatten each ball slightly with the back of a fork or your fingers.

Baking

  • Bake in the preheated oven for about 12-15 minutes or until the edges are lightly golden.
  • Remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
  • Once cooled, dust the cookies with additional powdered sugar, if desired.

Notes

For variations, consider adding citrus zest, chopped nuts, or fillings like jam or chocolate ganache. Store cookies in an airtight container.
