For the topping

  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1 cup cotija cheese, crumbled Traditional Mexican cheese.
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 whole lime, juiced For freshness.

Instructions
 

Grilling the Corn

  • Preheat your grill to medium-high heat.
  • Husk the ears of corn and rinse them under cool water.
  • Place the corn directly on the grill, grilling for about 10-15 minutes, turning frequently until charred and tender.

Preparing the Topping Sauce

  • In a bowl, mix together mayonnaise, sour cream, lime juice, garlic powder, chili powder, salt, and pepper until well blended.

Assembling the Elote

  • Once the corn is grilled, remove it from the grill and let it cool briefly.
  • Brush the prepared sauce generously over each ear of corn.
  • Sprinkle the crumbled cotija cheese over the coated corn.
  • Garnish with chopped cilantro and additional chili powder if desired.
  • Serve hot with lime wedges on the side.

Notes

Store leftovers by wrapping corn tightly and refrigerating. Reheat on the grill or in the oven for best results.
