  • 2 tablespoons olive oil
  • 1 teaspoon cumin Adjust according to taste.

  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Preparation

  • Preheat your oven to 400°F (200°C).
  • Wash the sweet potatoes thoroughly and pierce them several times with a fork.
  • Rub the sweet potatoes with olive oil, cumin, chili powder, garlic powder, salt, and pepper.
  • Place the seasoned sweet potatoes on a baking sheet lined with parchment paper.
  • Bake for about 45-55 minutes until tender and easily pierced with a fork.

Toppings Preparation

  • While sweet potatoes bake, mix black beans and corn in a bowl; season with salt and pepper.
  • Once sweet potatoes are cooked, let them cool for a few minutes.
  • Slice the sweet potatoes open lengthwise and fluff insides with a fork.
  • Spoon the black bean and corn mixture over each sweet potato.
  • Top with diced avocado and sprinkle with fresh cilantro.
  • Serve with lime wedges on the side.
