Salad Ingredients

  • 1 head Napa cabbage
  • 2 medium carrots grated
  • 3 stalks green onions minced
  • 1 package instant Ramen noodles discard flavor packet
  • 1 clove garlic minced
  • 1 optional hot chili pepper very finely minced

Dressing Ingredients

  • ¼ cup vinegar
  • ¼ cup light oil vegetable or peanut oil recommended
  • cup soy sauce
  • 2 Tbsp white sugar
  • 2 Tbsp ketchup
  • 2 Tbsp sesame oil
  • cracked black pepper to taste
  • salt pinch if necessary

Instructions
 

Preparation

  • Thinly slice the Napa cabbage, ensuring uniform pieces.
  • Peel and grate the carrots.
  • Rinse and trim the green onions, then mince them.
  • In a large mixing bowl, combine the sliced cabbage, grated carrots, minced green onions, and optional snipped chives.

Dressing

  • In a jar or bowl, combine minced garlic, optional chili pepper, vinegar, light oil, soy sauce, sugar, ketchup, sesame oil, cracked pepper, and salt. Mix well.

Assembly

  • Pour the dressing over the salad mix and toss well to coat.
  • Crunch the ramen noodles and add them to the salad just before serving.
  • Garnish with reserved minced green onions.

Notes

Chill the salad before serving for better flavor, but add ramen noodles right before serving to maintain their crunch. Customize with additional vegetables or proteins as desired.
