Ingredients

Dry Ingredients

  • 2 cups old-fashioned rolled oats
  • 1/2 cup unsweetened cocoa powder

Wet Ingredients

  • 1 cup granulated sugar
  • 1/2 cup vegan butter or coconut oil Use coconut oil for a dairy-free option.
  • 1/2 cup plant-based milk Any variety like almond or soy works well.
  • 1 tsp vanilla extract
  • Pinch of sea salt

Instructions

Preparation of Dry Ingredients

  • In a large mixing bowl, combine the rolled oats and cocoa powder. Mix them thoroughly until well incorporated and set aside.

Heating Wet Ingredients

  • In a saucepan over medium heat, combine the granulated sugar, vegan butter or coconut oil, plant-based milk, vanilla extract, and a pinch of sea salt. Stir this mixture regularly until it reaches a boil.

Boiling the Mixture

  • Once the mixture boils, continue stirring constantly for 1 minute.

Combining Ingredients

  • Remove the saucepan from heat and immediately pour the hot mixture over the bowl of dry ingredients. Stir well until everything is fully combined.

Shaping the Cookies

  • Allow the dough to cool for a few minutes. Once it's cool enough to handle, drop spoonfuls onto a lined baking sheet and flatten each spoonful slightly.

Cooling the Cookies

  • Leave your cookies to cool at room temperature for 30 to 60 minutes.

Notes

For a variation, consider adding nuts, seeds, or dried fruit. Ensure to allow enough cooling time to help cookies firm up properly.
