Ingredients
  

Cookies base

  • 3 cups quick oats Use quick oats for best texture
  • ¼ teaspoon salt

Chocolate mixture

  • 1 stick butter ½ cup
  • 1⅔ cups granulated sugar
  • ½ cup milk
  • ¼ cup unsweetened cocoa powder
  • 1 cup creamy peanut butter
  • 2 teaspoons vanilla extract

Instructions
 

Preparation

  • In a large mixing bowl, combine 3 cups of quick oats and ¼ teaspoon of salt, stirring to distribute the salt.
  • In a medium saucepan, melt together 1 stick of butter, 1⅔ cups of granulated sugar, ½ cup of milk, and ¼ cup of unsweetened cocoa powder over medium heat. Stir continuously.
  • Once melted, bring the mixture to a boil and let it boil for 1 minute without stirring.
  • Remove from heat and add in 1 cup of creamy peanut butter and 2 teaspoons of vanilla extract, stirring until smooth.
  • Pour the chocolate mixture over the prepared oats and stir until fully combined.

Shaping and Cooling

  • Using a spoon, drop spoonfuls of the mixture onto a parchment-lined baking sheet.
  • Allow the cookies to cool at room temperature for about 30 minutes, then transfer them to the refrigerator to set for about 1 hour.

Notes

For storage, keep cookies in an airtight container in the refrigerator for up to one week. Alternatively, freeze for up to three months, layering between parchment paper.
