  • 1 cup honey or maple syrup Can substitute with agave syrup if desired.
  • 3 cups rolled oats Do not use instant oats.
  • 1/2 cup cocoa powder Adjust for a darker chocolate flavor if desired.
  • 1 teaspoon vanilla extract Enhances flavor.
  • a pinch salt Balances the sweetness.

Preparation

  • Prepare a baking sheet by lining it with parchment paper.
  • In a large saucepan over medium heat, combine the natural peanut butter and honey (or maple syrup). Stir until melted and smooth.
  • Add in the cocoa powder, vanilla extract, and a pinch of salt. Stir continually until everything is well blended and heated through.
  • Remove the mixture from heat and add the rolled oats. Stir until the oats are fully combined with the chocolate-peanut butter mixture.
  • Using a spoon or a small cookie scoop, drop spoonfuls of the mixture onto the prepared baking sheet, shaping them into cookies.
  • Place the baking sheet in the refrigerator for about 30 minutes, or until the cookies are set and firm to the touch.
  • Once set, remove the cookies from the sheet and enjoy!

Notes

Store cookies in an airtight container in the fridge for up to a week, or freeze for up to three months. Use parchment paper between layers to prevent sticking.
