  • 1 cup rolled oats

  • ½ cup unsweetened cocoa powder
  • 1 teaspoon vanilla extract
  • Pinch salt Enhances sweetness.

Preparation

  • In a medium saucepan, over low heat, combine the peanut butter and honey (or maple syrup). Stir until fully melted and smooth.
  • Remove from heat and mix in the vanilla extract and a pinch of salt.
  • Gradually stir in the cocoa powder until fully incorporated and the mixture is smooth.
  • Remove the saucepan from heat. Add in rolled oats and mix until all ingredients are well combined and oats are evenly coated.
  • Line a baking sheet with parchment paper. Use a spoon or cookie scoop to drop rounded tablespoons of the mixture onto the parchment-lined sheet.
  • Flatten each mound slightly with the back of a spoon for a cookie-like appearance.
  • Place the baking sheet in the refrigerator and let the cookies set for about 30 minutes or until firm.

Notes

For serving, arrange cookies on a platter. Pair with milk or plant-based alternatives. Store in an airtight container. Customize with add-ins like shredded coconut or nuts.
