  • 1 pound ground beef Can substitute with ground turkey or chicken.
  • 1 can 15 oz beans (black or kidney, drained and rinsed)
  • 2 cups macaroni pasta
  • 1 can 14 oz diced tomatoes
  • 2 cups beef broth
  • 1 cup shredded cheddar cheese

Spices

  • 1 teaspoon chili powder Adjust for spice preference.
  • 1 teaspoon garlic powder
  • to taste Salt and pepper

Preparation

  • Heat a large pot over medium heat and add the ground beef. Break it into smaller pieces and cook until browned, with no pink remaining. Drain excess grease.
  • Add the drained beans, diced tomatoes, and beef broth to the pot. Stir in the macaroni pasta along with chili powder and garlic powder. Season with salt and pepper to taste.

Cooking

  • Increase heat to bring the mixture to a boil. Once boiling, reduce heat to a gentle simmer. Cover and let cook for 8-10 minutes, stirring occasionally, until pasta is al dente.
  • Remove the pot from heat and stir in shredded cheddar cheese until melted and creamy.
  • Serve warm, adding optional toppings like diced green onions, sour cream, or extra cheese.

Notes

For variations, consider adding diced jalapeños for spice, or swap out ground beef for a vegetarian option with more beans or veggies. Store leftovers in an airtight container for up to 4 days in the fridge or freeze for 2-3 months.
