Ingredients
  

For the cake

  • 2 cups all-purpose flour
  • 1.5 cups granulated sugar
  • 0.5 cups unsalted butter, softened Make sure it's at room temperature.
  • 1 cups orange juice Freshly squeezed if possible.
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 3 large eggs At room temperature.
  • 1 tablespoon grated orange zest
  • 1 teaspoon vanilla extract

For the frosting

  • 1 cup unsalted butter, softened Make sure it's at room temperature.
  • 4 cups powdered sugar
  • 0.25 cups orange juice Freshly squeezed if possible.
  • 1 tablespoon grated orange zest
  • a pinch salt

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  • In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  • Add the eggs one at a time, mixing well after each addition. Stir in the orange juice, vanilla extract, and grated orange zest.
  • In another bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.
  • Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  • Divide the batter evenly between the two prepared cake pans.

Baking

  • Bake for 25 to 30 minutes, or until a toothpick inserted in the center comes out clean.
  • Let the cakes cool in the pans for 10 minutes, then transfer to wire racks to cool completely.

Frosting

  • While the cakes cool, prepare the frosting by creaming together softened butter and powdered sugar until smooth.
  • Mix in the orange juice, grated orange zest, and a pinch of salt until well combined and fluffy.
  • Once the cake layers are completely cooled, frost the top of one layer, add the second layer on top, then frost the top and sides of the entire cake.
  • Decorate with additional orange zest or slices, if desired.

Notes

Keep ingredients at room temperature for best results. Measure flour properly to avoid a dense cake. Check for doneness a few minutes before suggested baking time.
