  • 4 pieces boneless, skinless chicken breasts
  • 1 cup orange marmalade
  • 1/4 cup soy sauce
  • 2 tablespoons rice vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon ground ginger
  • 1 tablespoon vegetable oil for greasing the baking dish

Preparation

  • Preheat your oven to 375°F (190°C) and grease a baking dish with a small amount of vegetable oil.
  • Pat the chicken breasts dry with a paper towel and season them with salt and pepper.
  • In a large mixing bowl, combine the orange marmalade, soy sauce, rice vinegar, minced garlic, and ground ginger. Mix until smooth.

Cooking

  • Place the chicken breasts in the prepared baking dish and pour the marmalade mixture over them, ensuring they are evenly coated.
  • Bake in the preheated oven for about 25-30 minutes, checking that the internal temperature of the chicken reaches 165°F (75°C).
  • Once done, remove from the oven and let it rest for a few minutes before serving. The glaze should be caramelized and sticky.

Notes

Consider marinating the chicken in the orange marmalade mixture for deeper flavors. Avoid overcooking to retain juiciness. This dish can be grilled or adapted with different marmalades or vegetables as well.
