Ingredients
  

For the cake

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 4 large eggs At room temperature
  • 1 cup all-purpose flour Spoon and leveled
  • 1 cup ground pistachios Medium grind
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • Zest of 2 medium oranges Freshly grated
  • 1/2 cup fresh orange juice Freshly squeezed
  • 1 teaspoon vanilla extract

Preparation

  • Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.
  • In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
  • Add the eggs one at a time, mixing well after each addition until well combined.
  • In another bowl, whisk together the all-purpose flour, ground pistachios, baking powder, and salt.
  • Gradually add the dry ingredients to the wet mixture, alternating with the orange juice and vanilla extract, starting and ending with the flour mixture.
  • Gently fold in the orange zest until evenly incorporated.
  • Pour the batter into the prepared cake pan, smoothing the top with a spatula.

Baking

  • Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

For a glaze, drizzle a simple mixture of powdered sugar and orange juice over the top. Serve with whipped cream or vanilla ice cream for added richness.
