  • 2 large eggs
  • 1/4 cup milk
  • 1 large Zest of 1 large orange For flavor.
  • 1 tablespoon freshly squeezed orange juice
  • 1 teaspoon vanilla extract

Dry Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder This is crucial for fluffiness.
  • 1/2 teaspoon salt

Preparation

  • In a large mixing bowl, combine the ricotta cheese, eggs, milk, orange zest, orange juice, and vanilla extract. Whisk until smooth and well mixed.
  • In a separate bowl, whisk together the flour, sugar, baking powder, and salt.
  • Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Be careful not to overmix; a few lumps are okay.

Cooking

  • Preheat a non-stick skillet or griddle over medium heat. Add a little butter or oil to coat the surface.
  • Pour about 1/4 cup of batter onto the skillet for each pancake. Cook for 2-3 minutes or until bubbles form on the surface and the edges look set.
  • Flip the pancakes and cook for another 2-3 minutes until golden brown.
  • Keep cooked pancakes warm in an oven set to low heat while you finish the batch.

Notes

Dust with powdered sugar and serve with fresh fruit, maple syrup, or yogurt. Can be customized with spices or different citrus fruits.
