Ingredients
  

For the Cookie Dough

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup crushed Oreo cookies
  • 1 cup mini chocolate chips (optional) Optional for extra sweetness

For the Cheesecake Filling

  • 1 cup cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract for cheesecake filling

Preparation

  • Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper and set them aside.
  • In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  • Add in the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract until combined.
  • In another bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • In a separate bowl, beat together the cream cheese, powdered sugar, and vanilla extract for the cheesecake filling until smooth and creamy.
  • Fold in the crushed Oreo cookies into the cookie dough mixture. If desired, add mini chocolate chips for extra sweetness.

Baking

  • Using a cookie scoop or tablespoon, drop a portion of the cookie dough onto the prepared baking sheets, spacing them about 2 inches apart.
  • Create an indentation in the center of each cookie dough ball, and fill it with a spoonful of cheesecake filling. Top with a little more cookie dough to cover the filling.
  • Bake in the preheated oven for about 10-12 minutes, or until the edges are lightly golden. Remove from the oven and let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

For best results, ensure butter and cream cheese are at room temperature. Avoid overmixing the dough for chewy cookies. Store cookies in an airtight container for up to a week.
