Ingredients
  

Dry Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg

Wet Ingredients

  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract

Mix-ins

  • 1 1/2 cups fresh peaches, peeled and diced
  • 1/2 cup rolled oats
  • 1/2 cup chopped pecans or walnuts (optional) Use if desired.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a medium bowl, mix together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Set aside.
  • In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar together until creamy and smooth.
  • Add the egg and vanilla extract to the butter mixture and mix until fully combined.
  • Gradually stir in the dry ingredients until just combined.
  • Fold in the diced peaches and rolled oats gently to avoid breaking the fruit.
  • If using, add the chopped nuts and mix until evenly distributed.

Baking

  • Use a cookie scoop or spoon to drop rounded tablespoons of dough onto the prepared baking sheet, leaving space between each cookie.
  • Bake for about 12-15 minutes or until the cookies are golden around the edges but still soft in the center.
  • Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

For best results, use ripe, fresh peaches. If using frozen peaches, thaw and drain well. Consider chilling the dough for 30 minutes for chewier cookies.
