Ingredients
  

For the cookie dough

  • 1 cup peanut butter Use creamy for a smoother texture.
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar Packed brown sugar is recommended.
  • 1 large egg Room temperature for better mixing.
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

For topping

  • 12 pieces Mini Reese's cups Or use peanut butter cups.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, combine the peanut butter, granulated sugar, brown sugar, egg, vanilla extract, baking soda, and salt. Stir until smooth and creamy.
  • Scoop out portions of dough and roll them into balls. Place on a lined baking sheet, about 2 inches apart.

Baking

  • Bake in the oven for 8 to 10 minutes until light golden edges appear.
  • Immediately press a mini Reese's cup into the center of each cookie.

Cooling

  • Allow cookies to sit on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

To prevent overbaking, watch the cookies closely towards the end of baking.
