  • 1 cup unsalted butter, softened Ensure butter is at room temperature.
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2.5 cups all-purpose flour
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 cup peppermint chocolate chips
  • 1 teaspoon peppermint extract
  • to taste Crushed peppermint candies for topping (optional) Add before baking if desired.

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large bowl, cream the softened butter, granulated sugar, and brown sugar together until light and fluffy.
  • Beat in the eggs one at a time, then mix in the vanilla extract and peppermint extract.
  • In another bowl, whisk together the all-purpose flour, baking soda, and salt.
  • Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  • Fold in the peppermint chocolate chips, ensuring even distribution throughout the dough.
  • Use a spoon or cookie scoop to drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  • If desired, sprinkle crushed peppermint candies on top of each cookie before baking.

Baking

  • Bake for 10 to 12 minutes or until the edges are lightly golden but the center remains soft.
  • Remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

Serve warm with milk or hot cocoa. Can be stored in an airtight container for up to a week or frozen for up to three months.
