Ingredients
  

For the salmon

  • 4 pieces salmon fillets Choose high-quality or wild-caught for best flavor
  • 1 cup fresh pineapple chunks Can substitute with mango or peach for variations
  • 1/4 cup brown sugar
  • 1/4 cup soy sauce Can substitute with teriyaki sauce for richer flavor
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1 tablespoon lime juice
  • to taste Salt and pepper
  • to taste Fresh cilantro, for garnish

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a blender or food processor, combine the pineapple chunks, brown sugar, soy sauce, olive oil, minced garlic, grated ginger, and lime juice. Blend until smooth.
  • Place the salmon fillets in a baking dish and season with salt and pepper.
  • Pour the pineapple glaze over the salmon, ensuring even coating.

Cooking

  • Bake the salmon for about 15-20 minutes, until it flakes easily with a fork.
  • Baste the fillets with the glaze halfway through cooking.

Serving

  • Remove the dish from the oven and let it cool slightly before serving.
  • Garnish the salmon with fresh cilantro before serving.

Notes

For a complete meal, serve with jasmine rice, quinoa, or steamed vegetables. Drizzle extra glaze before serving for added flavor. Store leftovers in an airtight container for up to three days in the refrigerator.
