Wet Ingredients

  • 1 cup canned pumpkin puree
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract

  • 1/2 cup chocolate chips Use semi-sweet or dark chocolate chips based on preference.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth and creamy (about 3-5 minutes).
  • Add the canned pumpkin puree and vanilla extract to the mixture, stirring until well combined.
  • In a separate bowl, mix the rolled oats, all-purpose flour, baking soda, cinnamon, nutmeg, and salt until thoroughly combined.
  • Gradually add the dry ingredients to the wet mixture, being careful not to overmix.
  • Gently fold in the chocolate chips.

Baking

  • Line a baking sheet with parchment paper.
  • Drop spoonfuls of dough onto the prepared sheet, spacing them about two inches apart.
  • Bake the cookies for 12 to 15 minutes, or until lightly browned around the edges.
  • Allow cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

To enhance flavors, experiment with mix-ins such as walnuts, dried fruit or substitute different nut butters. Store cookies in an airtight container and freeze for long-term storage.
