  • 1 can diced tomatoes

  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder Adjust for spiciness.
  • 1 teaspoon cumin
  • to taste salt and pepper

Preparation

  • Gather all your ingredients on a clean countertop.
  • In a large pot or slow cooker, combine the shredded chicken, black beans, kidney beans, diced tomatoes, and chicken broth. Mix gently to incorporate.
  • Add the diced onion and minced garlic.
  • Stir in chili powder, cumin, salt, and pepper for flavor.

Cooking

  • If using a slow cooker, set it to low for 6-8 hours or high for 3-4 hours. For a pot, bring to a simmer and cook for about 30 minutes, stirring occasionally.
  • Taste and adjust seasoning if needed before serving.
  • Serve hot with optional toppings.

Notes

Chili can be made ahead and reheats well. Let it sit after cooking for richer flavor. Consider adding veggies or using different beans based on preference.
