  • 2 pounds potatoes, diced Russets or Yukon Golds recommended.
  • 1 pound andouille sausage, sliced Can be substituted with plant-based sausage for vegetarian option.
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth Vegetable broth can be used for a vegetarian version.
  • 1 cup heavy cream
  • 1 tablespoon Cajun seasoning Add more to taste if desired.
  • to taste N/A Salt and pepper Adjust seasoning before serving.
  • to taste N/A Chopped green onions for garnish

Preparation

  • Dice the potatoes into bite-sized pieces, chop the onion, and mince the garlic.

Cooking

  • Place the diced potatoes at the bottom of the slow cooker.
  • Layer the sliced andouille sausage on top, followed by the chopped onion and minced garlic.
  • Sprinkle in the Cajun seasoning generously.
  • Pour the chicken broth over the mixture and stir gently to combine.
  • Cover the slow cooker and set it to cook on low for 6 to 8 hours or on high for 3 to 4 hours.
  • Once cooked, check the potatoes for tenderness. If fork-tender, stir in the heavy cream and adjust seasoning with salt and pepper as needed.

Serving

  • Serve hot in bowls, garnished with chopped green onions and optionally topped with shredded cheese or sour cream.

Notes

For variations, add different vegetables like bell peppers or corn. Blend part of the soup for a creamier texture.
