Ingredients
  

For the cookie dough

  • 1 cup creamy peanut butter Room temperature for better mixing.
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 1 large egg Room temperature for better mixing.
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 3/4 cups all-purpose flour

Preparation

  • Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  • In a large mixing bowl, combine the creamy peanut butter, granulated sugar, and brown sugar. Mix until smooth and creamy.
  • Add the egg and vanilla extract, and mix until fully incorporated.
  • In another bowl, whisk together the baking soda, salt, and flour. Gradually add this dry mixture to the peanut butter mixture, blending until you have a soft dough.

Baking

  • Scoop the dough using a tablespoon and form balls, placing them on the prepared baking sheets, leaving space between each cookie.
  • Gently press down on each ball with a fork to create a crisscross pattern on top.
  • Bake in the preheated oven for 10 to 12 minutes, until the edges are lightly browned.
  • Remove from the oven and let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

To achieve the best soft texture, consider chilling the dough for 30 minutes before scooping. You can also experiment with mix-ins like chocolate chips or nuts for a personal touch.
