  • 1 box strawberry cake mix Use any brand of cake mix you prefer.
  • 1/2 cup vegetable oil Can substitute with melted coconut oil for a different flavor.
  • 2 large eggs Make sure they are at room temperature for better mixing.
  • 1 cup white chocolate chips or vanilla chips Optional but recommended for added sweetness.
  • 1/2 cup powdered sugar For rolling the cookies before baking.
  • Optional: sprinkles for added flair Use colorful sprinkles to enhance presentation.

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, combine the strawberry cake mix, vegetable oil, and eggs. Stir until well blended and forms a thick dough.
  • If adding white chocolate chips, fold them into the dough.
  • Place powdered sugar in a shallow dish. Scoop out small balls of dough (about 1 inch) and roll them into balls.
  • Roll each ball in the powdered sugar until fully coated, then place them on the prepared baking sheet, spacing about 2 inches apart.

Baking

  • Bake the cookies in the preheated oven for 10 to 12 minutes, or until the edges are set and the tops look slightly cracked.
  • Remove the baking sheet from the oven and let the cookies cool for a few minutes before transferring them to a wire rack to cool completely.

Notes

For variations, consider adding shredded coconut, macadamia nuts, or using different flavored cake mixes. To store, keep in an airtight container at room temperature for up to one week or freeze for up to three months.
