  • 1 cup sugar substitute (such as erythritol or stevia) Choose your favorite sugar substitute.
  • 2 large eggs
  • 1 teaspoon vanilla extract

Dry Ingredients

  • 2 cups almond flour Spoon into the measuring cup for accuracy.
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt

Mix-ins

  • 1 cup sugar-free chocolate chips

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large bowl, beat the softened butter and sugar substitute together until creamy and smooth.
  • Add in the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  • In a separate bowl, combine the almond flour, baking soda, baking powder, and salt.
  • Gradually add the dry ingredients to the wet mixture, mixing until well combined.
  • Fold in the sugar-free chocolate chips until evenly distributed.

Baking

  • Drop spoonfuls of the cookie dough onto the prepared baking sheet, leaving space between each.
  • Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden.
  • Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

Store cookies in an airtight container at room temperature for up to a week. For longer storage, freeze in a freezer-safe bag for up to three months.
