Cookie Base

  • ½ cup vegan butter (softened) Use high-quality for best flavor.
  • cup light brown sugar
  • 1 teaspoon vanilla extract
  • ¾ cup all-purpose flour Can substitute with whole wheat flour.
  • 1 teaspoon cinnamon
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 ½ cups rolled oats Use rolled oats for chewier texture.
  • ½ cup vegan chocolate chips
  • 2 tablespoons plant-based milk (optional) Add if dough is too dry.

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large mixing bowl, combine the softened vegan butter, light brown sugar, and vanilla extract. Blend with a handheld mixer for about two minutes until creamy and light.
  • Add the all-purpose flour, cinnamon, baking soda, and salt. Mix until fully combined to form a soft dough.
  • Fold in the rolled oats and vegan chocolate chips until evenly distributed. If the dough is too dry, add a splash of plant-based milk.
  • Scoop out dough using a tablespoon and place onto a lined baking sheet, leaving space between each scoop.
  • Bake for 10 to 11 minutes until the edges are set but the centers are still soft and chewy. Let cool on a wire rack before serving.

Notes

Serve warm with almond milk or plant-based beverages, or use to create ice cream sandwiches. Store in an airtight container.
