Ingredients
  

Dry Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Wet Ingredients

  • 1 cup almond milk or any plant-based milk
  • 1/2 cup vegetable oil or melted coconut oil
  • 1/4 cup fresh orange juice
  • Zest of 2 oranges
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon vanilla extract

Preparation

  • Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan or line it with parchment paper.
  • In a large bowl, whisk together the flour, sugar, baking soda, baking powder, and salt.
  • In another bowl, combine the almond milk, vegetable oil, orange juice, orange zest, apple cider vinegar, and vanilla extract. Stir until mixed.
  • Pour the wet ingredients into the dry ingredients and mix gently until just combined. Be careful not to overmix.
  • Pour the batter into the prepared cake pan, spreading it evenly.

Baking

  • Bake in the preheated oven for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean.
  • Once baked, remove the cake from the oven and allow it to cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely.

Notes

Serve plain, dust with powdered sugar, drizzle with citrus glaze, or top with nuts or coconut whipped cream. Pairs well with tea or coffee.
