  • 1 cup natural peanut butter Opt for peanut butter without added sugar or hydrogenated oils.
  • 1 cup brown sugar
  • 1/2 cup maple syrup or agave syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup all-purpose flour or gluten-free flour

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a mixing bowl, combine the peanut butter, brown sugar, maple syrup, and vanilla extract. Stir until smooth and well-blended.
  • Add the baking soda and salt to the mixture. Stir to combine thoroughly.
  • Gently fold in the flour until the dough comes together and is slightly sticky. If adding chocolate chips or any other mix-ins, fold them in now.
  • Scoop tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart. Flatten each scoop slightly with a fork, creating a crisscross pattern on top.

Baking

  • Bake in the preheated oven for about 10-12 minutes, or until edges are lightly golden.
  • Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

These cookies are versatile; enjoy them plain or with dairy-free milk. For a fun twist, make cookie sandwiches with dairy-free frosting, or serve alongside fresh fruit. They can also be warmed briefly in the microwave for an extra comforting experience.
