Ingredients
  

Dry Ingredients

  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Wet Ingredients

  • 1/2 cup coconut oil or vegan butter, softened
  • 1 cup granulated sugar Could substitute with coconut sugar
  • 1/4 cup unsweetened applesauce
  • 1 teaspoon vanilla extract
  • 1/4 cup non-dairy milk (almond, soy, or oat)

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a medium bowl, mix together the flour, baking soda, baking powder, and salt. Set aside.

Mixing

  • In a large bowl, cream together the softened coconut oil or vegan butter with granulated sugar until light and fluffy (about 2-3 minutes).
  • Add the unsweetened applesauce and vanilla extract, blending until well combined.
  • Gradually add the dry ingredients into the wet mixture, stirring gently until just combined.
  • Slowly pour in the non-dairy milk, stirring until the dough forms. Adjust with more flour if too sticky.

Baking

  • Use a tablespoon or cookie scoop to portion out the dough onto the baking sheet, leaving space between cookies.
  • Bake for 10-12 minutes, until edges are lightly golden and centers look slightly underbaked.
  • Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

For best texture, use softened fat and avoid overmixing. Consider adding chocolate chips or spices to enjoy various flavors.
