Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, combine the softened butter, eggs, and vanilla extract. Beat together until well blended.
  • Gradually add the yellow cake mix, baking powder, and salt. Mix until combined, ensuring no dry pockets remain.
  • Fold in the colorful sprinkles, saving a few to sprinkle on top before baking.
  • Use a cookie scoop or tablespoon to drop dough balls onto the prepared baking sheet, leaving enough space between each cookie.
  • Sprinkle the reserved sprinkles over the dough balls for an extra pop of color.

Baking

  • Bake in the preheated oven for 10 to 12 minutes, or until the edges turn golden but the centers remain soft.
